How do I calculate a salary increase?+

New salary = current salary × (1 + raise ÷ 100). 5% on 8,000 is 8,400.

Does a raise change my end-of-service gratuity?+

Yes, if it's in your basic salary: gratuity is worked out on your last basic salary.
